Sweet Rice Bread - Quesadilla This bread is traditionally eaten with a cup of coffee for dessert and it originated from Central America and parts of Mexico. Enjoy!!

Ingredients
- ½ cup of butter
- 1 cup of sugar
- 4 eggs
- 1½ cups of rice flour
- ½ cup all purpose flour
- 1½ tsp baking powder
- ½ cup of feta cheese crumble ( use parmesan if feta is not available)
- ½ cup of milk
- raw sugar for decoration
Instructions
- Pre-heat oven to 350 degrees
- In a medium bowl mix rice flour, all purpose flour and baking powder mix well
- In a large bowl beat butter until creamy with an electric mixer
- Add sugar to butter and continue mixing
- Add eggs, while mixing, add flour mixture little by little
- Add cheese and milk continue mixing until is well mixed together
- Grease an 8" square glass baking dish with butter and dust with flour
- Pour mixture evenly and sprinkle with raw sugar crystals
- Bake for 40-50 minutes
