Ingredients
  • 3 large eggs
  • 2 cups steamed spinach
  • ¼ cup crumble feta
  • ½ medium onion sliced
  • 1 tbs of olive oil
  • salt and pepper to taste
Instructions
  1. In a saucepan add oil and sliced onion and cook until translucent
  2. in a small pot combine ¼ of a cup of water and spinach. Bring to boil and steamed for 2 - 3 minutes.
  3. In a medium bowl combine eggs, salt and pepper, onions and whisk together.
  4. add the mixture to frying pan and distribute steamed spinach and crumble feta
