Spinach Feta Omelette

- 3 large eggs
- 2 cups steamed spinach
- ¼ cup crumble feta
- ½ medium onion sliced
- 1 tbs of olive oil
- salt and pepper to taste
- In a saucepan add oil and sliced onion and cook until translucent
- in a small pot combine ¼ of a cup of water and spinach. Bring to boil and steamed for 2 - 3 minutes.
- In a medium bowl combine eggs, salt and pepper, onions and whisk together.
- add the mixture to frying pan and distribute steamed spinach and crumble feta
