Chickpeas and Bell Peppers

- 1 can of chickpeas 19oz
- 1 red bell pepper
- 1 green bell pepper
- 1 medium onion
- 2-3 garlic cloves, minced
- 1-2 tbs olive oil
- 2 bay leaves
- 1 pinch of cayenne pepper
- ΒΌ cup of chicken or (vegetable stock for vegetarians)
- Salt and pepper to taste
- Cut peppers and onion into small squares. In a medium sauce pain heat up olive oil
- over medium heat, add onions and peppers cook for 2-3 minutes, add minced garlic and keep cooking for another 3-5 minutes add chickpeas and remaining ingredients and cook for about 5 minutes.
- Plate and Enjoy!!!
