Chickpeas and bell peppers

Ingredients
  • 1 can of chickpeas 19oz
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 2-3 garlic cloves, minced
  • 1-2 tbs olive oil
  • 2 bay leaves
  • 1 pinch of cayenne pepper
  • ΒΌ cup of chicken or (vegetable stock for vegetarians)
  • Salt and pepper to taste
Instructions
  1. Cut peppers and onion into small squares. In a medium sauce pain heat up olive oil
  2. over medium heat, add onions and peppers cook for 2-3 minutes, add minced garlic and keep cooking for another 3-5 minutes add chickpeas and remaining ingredients and cook for about 5 minutes.
  3. Plate and Enjoy!!!
